A simple and delicious teriyaki chicken recipe that’s perfect for weeknight dinners, combining sweet and savory flavors with tender chicken.

Ingredients

  • 1 lb boneless, skinless chicken thighs (or breasts)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Sesame seeds (for garnish)
  • Green onions, sliced (for garnish)

Instructions

  1. Marinate the chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Place the chicken in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
  2. Preheat your grill: Set the grill to medium-high heat, or heat a nonstick skillet over medium heat.
  3. Cook the chicken: Remove the chicken from the marinade (be sure to reserve that marinade!) and cook it on the grill or in the skillet for about 6-7 minutes per side, or until the chicken is cooked through.
  4. Create the sauce: Pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce the heat to a simmer for 5-7 minutes to thicken.
  5. Serve: Let the chicken rest for a few minutes, slice it, and drizzle the thickened sauce over it. Garnish with sesame seeds and sliced green onions.

Notes

For a spicy kick, add red pepper flakes to the marinade. For a vegetarian option, replace chicken with tofu.
