A hearty and comforting dish that combines rich flavors of butter and garlic with chicken, perfect for busy weeknights.

  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter or olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and cracked black pepper, to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives

Instructions

  1. Season the chicken with salt and cracked black pepper.
  2. Heat butter in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and caramelized onions. Sauté for 2-3 minutes until fragrant.
  4. Pour chicken broth, honey, heavy cream, and paprika into the skillet. Simmer for around 5 minutes.
  5. Return the chicken to the skillet, adding cherry tomatoes, olives, and cayenne pepper. Stir and simmer for another 2-3 minutes.
  6. If desired, sprinkle shredded cheese on top and allow it to melt slightly. Garnish with dried parsley and serve hot.

Notes

For a lighter version, you can replace cream with Greek yogurt. For a dairy-free option, consider using plant-based cheese.
