4 pieces boneless skinless chicken breasts or thighs
4 tablespoons butter or olive oil
4 cloves garlic, minced
1 cup chicken broth (low-sodium recommended)
2 tablespoons honey
1 teaspoon paprika
Salt and cracked black pepper, to taste
1 cup caramelized onions
1 cup shredded cheddar or Monterey Jack cheese (optional)
2 tablespoons dried parsley
1 teaspoon cayenne pepper or hot sauce
1/2 cup heavy cream
1 cup cherry tomatoes and kalamata olives
Instructions
Season the chicken with salt and cracked black pepper.
Heat butter in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and set aside.
In the same skillet, add minced garlic and caramelized onions. Sauté for 2-3 minutes until fragrant.
Pour chicken broth, honey, heavy cream, and paprika into the skillet. Simmer for around 5 minutes.
Return the chicken to the skillet, adding cherry tomatoes, olives, and cayenne pepper. Stir and simmer for another 2-3 minutes.
If desired, sprinkle shredded cheese on top and allow it to melt slightly. Garnish with dried parsley and serve hot.
Notes
For a lighter version, you can replace cream with Greek yogurt. For a dairy-free option, consider using plant-based cheese.
