1 cup chicken broth
8 oz cream cheese
1/2 cup heavy cream
1/2 cup grated Parmesan
1/4 cup sun-dried tomatoes
1 tbsp minced garlic
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp cornstarch
2 tbsp water
Instructions
Begin by placing the chicken breasts in the slow cooker.
In a separate bowl, whisk together the chicken broth, cream cheese, heavy cream, grated Parmesan, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and black pepper until smooth and well-combined.
Pour this creamy mixture over the chicken in the crockpot.
Cover the slow cooker and select either LOW for 6-7 hours or HIGH for 3-4 hours, depending on your schedule. The chicken should be tender when done.
Once the cooking time is complete, shred the chicken using two forks and return it to the slow cooker.
In a small bowl, mix cornstarch and water to create a slurry. Add this to the slow cooker.
