A quick, nutritious breakfast featuring fluffy scrambled eggs, creamy Greek yogurt, and fresh vegetables.

  • 1/4 cup Greek yogurt
  • 1/2 cup spinach, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 avocado, sliced
  • Salt and pepper to taste
  • Whole grain toast (optional)

Instructions

  1. Heat a skillet over medium heat. Crack the eggs into the skillet, scrambling them until fully cooked and fluffy.
  2. In a separate bowl, stir together the Greek yogurt, chopped spinach, halved cherry tomatoes, and a pinch of salt and pepper until well combined.
  3. Once your eggs are ready, plate them and generously top with the avocado slices.
  4. For extra crunch, serve the scramble with whole grain toast on the side.

Notes

For added flavor, you can sauté onions or garlic before adding the eggs. Serve warm with a sprinkle of feta or fresh herbs.
