Whole Wheat Chocolate Chip Banana Bread Pancakes

Delicious pancakes that combine the comforting flavors of banana bread with chocolate chips, perfect for breakfast or brunch.

Ingredients

  • 1 cup wholemeal self-raising flour or plain/whole wheat all-purpose flour
  • 3/4 cup white self-raising flour or plain/all-purpose flour
  • 4 tablespoons sweetener or sugar of choice
  • 2 teaspoons baking powder
  • 2 large ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 2 x-large eggs
  • 2 tablespoons light butter, melted or oil of choice
  • 1 3/4 cup low-fat/skim milk or unsweetened almond milk
  • 1/3 cup chocolate chips

Instructions

  1. Mix the wholemeal flour, white flour, sweetener, and baking powder in a large bowl.
  2. Mash the ripe bananas in a separate bowl until smooth. Add the eggs, vanilla extract, and melted butter or oil; mix well.
  3. Combine the wet mix with the dry ingredients, gradually adding the milk while stirring until a smooth batter forms.
  4. Fold in the chocolate chips gently.
  5. Preheat a non-stick pan over medium heat, lightly grease if necessary.
  6. Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and edges set, then flip and cook for another 1-2 minutes until golden brown.
  7. Repeat until all the batter is used and serve warm.

Notes

Serve with maple syrup or fresh fruit for added flavor. Experiment with different types of chocolate chips or spices for variations.
