A quick and easy low-carb yogurt bread that’s versatile for any meal of the day.

Ingredients

  • 1 cup Greek yogurt
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine Greek yogurt, eggs, and olive oil in a large bowl. Mix until smooth.
  3. Sift together almond flour, baking powder, and salt in a separate bowl.
  4. Incorporate the dry ingredients into the wet mixture. Stir gently until just combined.
  5. Pour the batter into a greased loaf pan, smoothing the top.
  6. Bake for 30-35 minutes until golden brown and a toothpick inserted comes out clean.
  7. Allow the loaf to cool slightly before slicing. Enjoy fresh!

Notes

Store leftovers wrapped tightly in plastic wrap or in an airtight container to keep fresh for up to 4 days. It can also be frozen for later use.
