Chicken with Buttered Noodles

A quick and comforting dish featuring tender chicken and rich buttery noodles infused with garlic and Italian seasoning.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried Italian seasoning
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet. Cook for about 5-7 minutes until golden and fully cooked. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add 2 tablespoons of butter and let it melt over medium heat. Add the minced garlic and Italian seasoning, cooking for 1-2 minutes until fragrant.
  4. Toss the cooked noodles into the skillet, adding the remaining tablespoon of butter. Stir well to coat the noodles thoroughly.
  5. Return the cooked chicken to the skillet. If using Parmesan cheese, sprinkle it over the chicken and noodles. Finish with fresh parsley for garnish. Serve warm and enjoy!

Notes

Consider swapping in whole grain pasta or gluten-free noodles. Enjoy with a side salad or crusty bread.
